Ethiopian Clarified Butter (Recipe in Description)

8 lb. (4 kg.) Unsalted Butter
- 12 tbsp. Ethiopian Cardamom 'Korerima' coarsely ground
- 1 1/3 cup Lippia Abyssinica 'Koseret'
- 2 tbsp. White Cumin 'Nechazmud' coarsely ground
- 2 tbsp. Black Cumin 'Tikurazmud' coarsely ground
- 2 tbsp. Fenugreek 'Abish' coarsely ground
- 2 pieces of Ginger peeled and pressed (optional)
- 4 leaf Lemongrass (optional)

To marinate butter 3-4 days before clarifying, use half portion of the following spices from the above list
- Ethiopian Cardamom 'Korerima' coarsely ground
- Lippia Abyssinica 'Koseret'
- White Cumin 'Nechazmud'
- Black Cumin 'Tikurazmud'

ለ 8 ፓውንድ (ለ 4 ኪሎ) ቅቤ
12 ሾርባ ማንኪያ የተፈጨ ኮረሪማ
1 1/3 ኩባያ ኮሰረት
2 ሾርባ ማንኪያ ነጭአዝሙድ
2 ሾርባ ማንኪያ ጥቁር አዝሙድ
2 ዝንጅብል
2 ሾርባ ማንኪያ አብሽ
4 ጠጅሳር ቅጠል

ቅቤውን አሽተን ከ3-4 ቀን ለማስቅመጥ ከላይ ካሉት ቅመሞች ውስጥ ግማሹን መጠን ቀንሰን መጠቀም፡

- ነጭ አዝሙድ
- ጥቁር አዝሙድ
